Discussed not using the mop sink for food prep or food contact equipment. Discussed adding a splash guard between mops sink and 3 comp sink to prevent cross contamination. Discussed use of a dedicated prep sink for food prep.

Observed closed and stacked containers of cooked beans and cooked beef stew with internal temperature between 47-60F in the walk-in cooler. Observed containers were date marked 6/23, the day prior. The person in charge stated the food items had been cooked and placed for cold holding the day before, more than 6 hours ago.

Person in charge (PIC) stated they wash, rinse, sanitize plastic gallons to re-use for storing broth. Discussed with PIC that gallons are not meant to be re-used as they can degrade over time and contaminate food product. PIC stated they will purchase food grade containers by next routine inspection.
