Observed potato and onion and cubed chicken samosas hot holding in front display case at internal temperature of 119-122 deg F. Manager informed establishment has a time as a control policy and provided to inspector. The Manager did not have note stating time out of control as per policy. Manager was able to recall time food was placed out of temperature control and marked on note pad as per their procedure. Corrective Action: Corrected at time of inspection.
