#20 — Proper Cooling Time and TemperaturesPriority3-501.14

Inspector's notes

Observed metal containers of refried beans inside the walk-in with an internal temperature of 110*F. Internal temperature registered with an internal probe thermometer. Per PIC the beans were cooked to temperature, allowed to cool on the shelf, allocated into larger than 4in metal pans, loosely covered, then placed in walk-in on the middle shelf to cool 3hrs prior to time of inspection. All TCS foods improperly cooled were discarded by PIC at time of inspection. Educated PIC that all cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. Corrected at time of inspection.
