This establishment received a(n) A Grade and had 0 Priority, 0 Priority Foundation violations on this inspection.Observed unpasteurized hard-shelled eggs in walk-in refrigerator. Advised person in charge (PIC) that only pasteurized hard shelled or pasteurized liquid eggs shall be used when serving a highly susceptible population (HSP). Pasteurized eggs can be used for baking and hard boiling only. PIC stated they thought the unpasteurized eggs were pasteurized. PIC also stated they are fully cooking individual unpasteurized eggs, then cooling the eggs in the freezer. The eggs are reheated the next day to 165 degrees F then served. Reiterated to PIC that the facility is an HSP and only pasteurized eggs shall be used when serving patients.
