Discussed condition of canned goods, common names of foods taken from bulk on bottles, storage of paper/plastic goods in dining room, thawing, and re-use of sour cream buckets. According to PIC ceviche is fully cooked.

Observed food debris on vegetable dicer on the counter near the walk in refrigerator. After discussion with the person in charge it was determined the dicer was not used today.

Inspector's notes

Observed two large buckets of cooked red salsa and mole sauce more than 4 inches deep cooling in the walk in refrigerator. Internal temperature measured between 78-81°F for the salsa and mole. After discussion with the person in charge it was determined the salsa and mole had been cooling since 7AM (3+ hours).

If utensils are stored in food, the handles must be stored above the surface of the food. All in-use utensils were properly stored at time of inspection. New tongs and salsa obtained at time of inspection. Corrective Action: Corrected at time of inspection.
