Inspector's notes

In walk-in cooler a container of refried beans measured an internal temperature of 61'F and a large pot filled halfway with salsa verde measured an internal temperature of 64'F. Per kitchen staff both items had been prepared the prior day. As food had not cooler within necessary time frame it was embargoed. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. Corrective Action: Corrected at time of inspection.
