PRIORITY VIOLATION-3-501.16(A)(1) - Priority: Time/Temperature Control for Safety Food, Hot Holding. Predefined Comment: Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. After reviewing with deli manager, hot case had not been turned on. Per deli manager, listed foods had been placed in case for more than two hours. Listed foods were embargoed (see embargo sheet). Predefined Comment: All TCS foods improperly hot held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Priority Foundation-3-501.17, Pf: Ready-To-Eat Time/Temperature Control for Safety Food - Date Marking. Open package of deli ham with open date of 9/20 and use by date 9/20; open package of deli turkey with open date of 9/15 and use by date 9/24. TCS food is to be clearly marked to indicated the date or day the food shall be consumed on premises, sold, or discarded when held at a temperature of 41°F or less for a maximum of 7 days. Per asst. deli manager, package of ham was opened on 9/20 and had incorrect use by date; and turkey had the incorrect use by date. Properly date mark Ready To Eat TCS foods. ------------- Asst. deli manager provided correct use by dates at time of inspection. After discussion with the person in charge, it has been determined that the root cause of the violation was training staff and verification breakdown, which resulted in the violation.
