Observed multiple containers of establishment made beef broth with no prep date stored in reach-in cooler across from prep sink at time of inspection. Per person in charge (PIC), beef broth was made 6 days prior to inspection. PIC dated beef broth at time of inspection. Reviewed proper date marking procedures and provided date marking handout via email to PIC at time of inspection. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). All RTE/TCS foods were properly date marked at the time of inspection. Corrective Action: Corrected at time of inspection.
