Observed low concentration of quaternary ammonia sanitizer with inspector test strips. Test redone using facility test strips and found to be at concentration consistent with 50 ppm. Food-contact surfaces must be properly sanitized after washing and rinsing. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. PIC adjusted tubing to reach proper concentration level. Corrective Action: Corrected at time of inspection.

Observed handsink next to three-compartment sink with a squeegee inside handsink. Also observed handsink without soap. Per person-in-charge (PIC), the handsink next to the three-compartment sink is never used, and employees use the handsink around the corner instead. Discussed with PIC that all handwash sinks must be supplied with hot water of at least 100°F, soap and an approved hand drying provision at all times. Facilities must be maintained in a condition that promotes handwashing. Also discussed that handsinks must be located within 25 feet AND within view from all food preparation and warewashing areas. Calibrated probe thermometer with PIC at time of inspection. Discussed: scrubbing soda nozzles in addition to soaking to ensure they are cleaned to sight and touch, and placing single-use forks upside down to protect lip-contact surface.
