Corrective Action: Corrected at time of inspection. In the salad cold table, pans of chicken, cut lettuce, pesto containing cheese and mayo labeled for refrigeration at 57*F to 63*F internally. PIC stated all TCS items except for the mayo had been in the unit one hour and moved them to the walk-in to re-cool. The mayo had been in the unit several hours and was embargoed and discarded by the PIC. Mild and medium sauce with real butter added in-house held on the counter for several hours, not under time control at 80*F. Embargoed and discarded.
