Observed establishment non-continuously cooking chicken breast. Informed PIC that a written procedure is required for each item non-continuously cooked and that a log must be filled out and maintained onsite. Provided procedure and log forms via email. Non-continuous cooking of raw animal proteins requires prior approval of written procedures by department. Corrective Action: Correct prior to re-inspection on 8/3/2026.

No County legal action will result from this inspection.1. Discussed with PIC that a vomit and fecal accident procedure is required to be maintained onsite. Provided procedure document via email. 2. Observed operator non-continuously cooking beef. PIC stated that they do this with multiple menu items. The initial cook time and temperature of the non-continuously cooked items are stamped on the trays of these items and all non-continuously cooked items are stored properly. Informed PIC that a procedure and log form for each item that is non-continuously cooked needs to be filled out and maintained onsite. Provided the guidance, procedure, and log forms via email.
