Inspector's notes

Observed two cases of raw fish being stored above cabbage in the cold-holding unit near the produce department. Discussed proper storage with person in charge (PIC) and contamination risk. PIC moved the fish to another unit at time of inspection. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Corrective Action: Corrected at time of inspection.

#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed 12 full cases of eggs on a pallet in the produce section. The eggs were displayed for sale and not under any kind of refrigeration. Person in charge (PIC) stated they had been placed there an hour prior when establishment opened for the day. Discussed needing to keep eggs/TCS foods under refrigeration. PIC moved the cases of eggs to a cold-holding unit at time of inspection. Found an additional 9 full cases of eggs on pallet in the stockroom, also not under refrigeration. PIC stated they were for a customer to come pick up. Surface temp was 68*F with inspector's laser thermometer. Internal temperature of egg was 61*F using probe thermometer. This group of eggs were out of refrigeration for 4- hours. PIC is taking home. See embargo form. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Correct prior to next routine inspection.

Observed live turtles and live goby fish in the 3-compartment sink at time of inspection. The person in charge (PIC) stated that they sell it to customers. PIC was informed that they are not approved for live fish and turtle sales. They removed the live animals from the premises to take home. A variance/HACCP must be obtained prior to conducting any specialized processes. Discussed with owners that a Meat Market permit is required if separating meats or selling fresh meats and seafoods. Discussed a hand sink and minor remodel will be required if fresh plant foods are cut onsite. No fresh plant foods observed at the time of inspection.
