Corrective Action: Corrected at time of inspection. Cooked sauces containing onions, butter, cream and yogurt and cooked sauces containing garbanzo beans and onions, prepared the previous night per manager and date mark, at 51*F to 72*F internally. The sauces were in deep, tightly covered containers in a walk-in holding at 39*F. Embargoed, manager discarded. Reviewed proper two tier cooling with the manager and staff.

Manager stated they will adjust the machine to dispense the proper 50-100 ppm concentration, manually sanitize equipment until unit is adjusted and pulled back recently washed ware for sanitizing.
