Inspector's notes

Observed a wet towel in the container of sushi rice. Person in charge (PIC) stated that they sometimes use the wet sanitizer towels to keep the rice from drying out. Discussed that keeping the lid on the rice should be sufficient to keep the rice from drying out without any risk of contamination due to cleaning towels. PIC took the towel out and replaced the rice with a fresh batch at time of inspection. Corrective Action: Corrected at time of inspection.
