Observed dairy milk being kept in the double door fridge in the coffee bar area with internal temperature of 58°F. Ambient temperature measured via inspector's min/max thermometer 59.0°F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Person in charge (PIC) discarded milk and whipped cream at time of inspection. The cooler stopped working yesterday per PIC. Corrective Action: Corrected at time of inspection.

PIC stated cooler stopped working yesterday. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. *This fridge is the only one in the coffee bar area *PIC to keep dairy products in the refrigerated display case in the meanwhile Corrective Action: Correct within 24 hours.
