Inspector's notes

Observed sliced cheese at 55°F, a hashbrown patty at 58°F, and shell-on eggs at 56°F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection due to Mobile Food Code no-carry over requirement. Corrective Action: Corrected at time of inspection.

Observed fridge holding at 54°F with out of temperature foods. Per PIC, fridge had been checked the week prior when he was concerned about whether or not it was functioning properly. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. Onsite HVAC staff were able to bring down temperature with freon to satisfy capacities requirement. Corrective Action: Corrected at time of inspection.

Observed cut watermelon half holding in refrigerator at 50°F. Observed fridge ambient temperature holding at 59°F at time of inspection. Watermelon was only TCS item in refrigerator.
