Inspector's notes

Observed octopus, shrimp, diced tomato and shrimp ceviche stored in the top portion of the reach-in with internal temperatures ranging from 51*F to 56*F. Per owner the foods were placed in the reach-in five hours prior to the inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS (time/temperature control for safety) foods must be maintained at 41°F or below. The TCS foods were embargoed at time of inspection. Corrective Action: Corrected at time of inspection.
