Observed bag of shredded cheese sitting on top of reach-in refrigeration system with a temperature of 46.3. When asked how long the food item had been there, the person in charge stated that it was placed there ten minutes prior. Except during preparation, cooking, cooling, or when time is used as a control all TCS food to be maintained at 41°F or less. Person in charge placed food item in reach-in refrigeration system at time of inspection.
