Flat top grill observed being used to hot hold and brown sausages for sale at front of booth without any sneeze guards or alternate barriers between prep area and consumers. Per FDA guidelines, food must be protected by packaging, counter service line, sneeze guards, display case or other effective means. Operator used metal lids from unused hot holding stations to protect sausages from customers. Corrective Action: Corrected at time of inspection.
