Inspector's notes

Observed cooked beef reporting at 53°F in reach in refrigerator next to stove. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Operator confirmed that food had been holding properly one hour prior at their fixed establishment, then was moved to the unit and likely increased in temperature during transport. Operator had just arrived and fridge was just turned on, and still returning to 41°F at time of inspection. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit with ice and frozen items to help it rapidly return to 41°F. Corrective Action: Corrected at time of inspection.
