At time of inspection, observed no temporary hand wash station. Per person in charge the temporary hand wash station was in their personal vehicle. Person in charge provided the temporary hand wash station during inspection. Discussed the importance of having the temporary hand wash station available during any food prep and service. Observed temporary handwash station not prepared and still in back of operator's vehicle at time of inspection. PIC moved and set up temporary hand sink equipment at time of inspection. Handwash sinks must be supplied with hot water of at least 100°F, soap and an approved hand drying provision at all times. Facilities must be maintained in a condition that promotes handwashing. PIC relocated handwash sink and all items blocking handwash sink at time of inspection. Observed cut cabbage coleslaw mix and shredded cheese in ice bucket and cooler with ice holding at 65 and 50 degrees Fahrenheit respectively. Per operator, the food had been cold holding for approximately one hour. Ice was observed still in bags against one side of food containers. PIC was instructed to submerge the food containers in ice until they returned to proper cold holding temperature, and did so at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

Operator did not have thermometers with them on site at time of inspection. PIC said they had left them at their office for the day. Properly calibrated probe thermometers are required at all times for monitoring food temperatures. Must provide a probe thermometer for establishment prior to re-inspection.
