Observed TCS foods above cold-holding temperature requirement inside only fridge on unit, including milk on top shelf at 52°F and bacon on bottom shelf at 48°F. Per PIC, foods were placed in fridge around 7am this morning. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. After a second reading at 52.8°F with min/max thermometer and ten more minutes, the unit has been recognized as not at cold-holding capacity and therefore must be suspended until fixed.
