Inspector's notes

Observed several items left out of temperature control above the crepe station containing the following: container of shredded yellow cheese, container of shredded white cheese, container of cut strawberries, bottle of ranch dressing, and a bag of spinach. Operator stated they leave it out to keep the fridge cold in the heat, and they discard the product after 3 hours. Operator was informed that these items are considered TCS (Time/Temperature Control for Safety), and due to being TCS, these items need to be controlled for safety. Operator was informed that a written policy needs to be created and maintained in order to use time as a control. A policy was written and created at the time of inspection for 4hr time as a control. Corrective Action: Corrected at the time of inspection.
