Operator verified that while they work 4 days out of the week, they only visit the commissary once a week. Per MCEHC, mobile food establishments shall operate from an approved commissary or other food service establishment as required by this Department, and shall report at least daily to such location. Directed operator to visit commissary for water and wastewater service every day of operation. Corrective Action: Correct prior to next routine inspection. MCEHC Chap. 8, Sec. 3, Reg. 6d, 9d, 10e, 11d - Food preparation shall be simplified to reduce excessive steps where food may become contaminated. Excessive steps may include, but are not limited to, cooking overnight without oversight, cooling, or cutting large volumes of food items. This prohibition does not apply to foods that have been prepared or packaged in permanent food establishments or commissaries meeting the requirements of this code. Addl Notes: Observed cooked beef intestine in reach in refrigerator reporting at 70 degrees Fahrenheit. Operator said it had been cooked on the unit and placed in the refrigerator roughly 2 hours prior to cool. Per MCEHC, food preparation shall be simplified to reduce excessive steps where food may become contaminated. Excessive steps may include, but are not limited to, cooking overnight without oversight, cooling, or cutting large volumes of food items. Operator was instructed to cease cooling on the unit and prepare all food items in advance or hot hold them after cooking. Food was reheated to 165 degrees Fahrenheit and maintained hot at time of inspection. Corrective Action: Corrected at time of inspection.
