Observed establishment in operation since 6am and at 10:30am establishment had containers between use used for frothing TCS milk. Establishment had no sanitizer on site at the time of inspection. Equipment food-contact surfaces and utensils are to be cleaned throughout the day at least every 4 hours. Per PIC, they ware wash at the commissary. PIC was able to get bleach sanitizer from neighboring mobile food unit to properly ware wash at the time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes
Per operator, no food was being served out of mobile unit for event they were attending. When asked why the prep table near the entrance contained food both in the prep and storage areas, they clarified they were using the space to store and prepare personal food and lunches during their shift, and only a couple items inside were being used for drink preparation. Discussed the importance of maintaining a separation of spaces for personal food storage and preparation and those for commercial food preparation. Spaces used for commercial food preparation shall not be used as spaces for the storage and preparation of employee foods. PIC was instructed to assign designated areas for food preparation and storage going forward. Corrective Action: Correct prior to next routine inspection.
