Inspector's notes
Observed two sealed containers of Carne asada, a container of sliced tomatoes, containers sliced beef flanks, containers of shredded cheese all with an internal temperature range of 58-79*F while cold held inside the make-line unit. The unit was over packed with products, not enough air circulation to cool or keep products cold enough (41*F or below). Discussed the importance of air circulation in cold holding units. The establishment had just opened, and their commissary is their restaurant behind the food truck. All products were taken back to the restaurant where they were portioned into smaller containers and put in walk-in cooler to cool. Products were brought back to the mobile food truck in smaller containers and at proper temperature. The ambient temperature of the make-line unit was observed at 44*F and dropping. TCS foods must be cold held at 41*F or below to prevent bacterial growth. Discussed the temperature danger zone (range between 41*F and 135*F) with PIC. Corrective Action: Corrected at time of inspection.
