Observed unit's only refrigerator holding at 49°F. After roughly an hour, unit was still unable to hold at 41°F or below. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. Mechanic was called and serviced unit until unit was observed holding at 41°F. Corrective Action: Corrected at time of inspection.

PIC was able to go buy paper towels before end of inspection. Hand drying towels must always be available at all hand washing sinks. For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4576/AMC-Toolbox---Cold-Holding. ---- Sliced and diced tomatoes observed with an internal temperature of 60*F, and shredded cheese with an internal temperature of 65*F at time of inspection. These products were being cold held in an ice bath above the refrigerated make table. Per PIC, tomatoes and cheese were stocked less than 3hrs prior to this inspection. All three items were submerged in a container of ice and placed in fridge, later observed at 45*F and dropping. There was very little ice in the ice bath, not enough to keep the food cold. PIC replenished the ice. Discussed best practices for when using ice baths. TCS foods must be cold held at 41*F or below to prevent bacterial growth. Discussed the temperature danger zone (range between 41*F and 135*F) with PIC. Correct By: Corrected At Time Of Inspection
