Observed employee cracked raw unpasteurized eggs, did not wash hands, and continue to work with ready to eat food. Employee was stopped and educated on hand washing policy. Hand washing is required when switching between working with raw FOOD and working with READY-TO-EAT FOOD. Employee corrected by washing hands and putting on clean gloves. Corrective Action: Correct at once.

Inspector's notes

Observed several cooked chicken and beef with internal temperatures between 87-107 degrees F. during this inspection. Per operator, they arrived two hours prior to this inspection, and they were reheating items per order. Discussed with operator that except during cooking, cooling or when time is used as control, all hot food should be held at 130 degrees F or above. Operator corrected by using time as control and will dispose food within two hours. Corrective Action: Correct at once.
