Inspector's notes

On off cook top, cooked oxtail and cooked pasta and under warming unit, cooked rice with internal temperatures of 107*F-112*F. Per manager, all foods were prepared within normal time parameters. Manager turned on cook top and oven to reheat oxtail, pasta, and rice to 165*F. Maintain TCS (time/ temperature control for food safety) foods at a hot holding temperature of 135*F or higher at all times. Corrective Action: Corrected at time of inspection.

This log shall be maintained using a Department approved format and maintained with the establishment at all times.
