MCEHC Chap. 8, Sec. 3, Reg. 5e - Mobile food establishments serving time/temperature control for safety foods shall maintain a log of visits to the approved commissary or food service establishment as required by this Department. This log shall be maintained using a Department approved format and maintained with the establishment at all times. The logs shall be maintained for a period of 30 days and should be available for review by the Department.

Inspector's notes
Observed fully cooked corn dogs stored below raw meat items in tabletop reach-in cooler located opposite of stovetop. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Provided proper food storage chart via email. Corrective Action: Corrected at time of inspection.

PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4576/AMC-Toolbox---Cold-Holding.---In the prep cooler, observed raw shrimp and cooked prickly pear having internal temperatures of 47-51*F. Person in charge states these foods had been in the unit for more than 4 hours and voluntarily discarded them. Also observed in the standing refrigerator mozzarella cheese, sour cream and in house made salsa (tomatillos and tomatoes) having internal temperatures of 44-50*F. These food items were also voluntarily discarded at the time of inspection. Discussed how all time/temperature control for safety (TCS) foods that are cold held must keep an internal temperature of 41*F or below to prevent bacterial growth. All TCS foods in the unit were discarded at the time of inspection. Discussed the importance of having all cold holding units able to keep an ambient temperature of 41*F or below to prevent bacterial growth of TCS foods. Please do not store any TCS foods in unit until it is working properly. Mobile unit has enough cold holding units to continue operation. Reinspection will be conducted within 10 days.
