Observed through questions that the facility is washing and chopping produce at home, and not at commissary. Talked to staff about produce sink and larger water tank, or doing food prep tasks at commissary or buying prepared/washed/chopped produce from proper vendors. MCEHC Chap. 8, Sec. 3, Reg. 5b - Mobile food establishments shall operate from an approved commissary or other food service establishment as required by this Department, and shall report at least daily to such location for supplies, food storage, vehicle and equipment cleaning, waste disposal, and service operations. Addl Notes: Observed facility did not have commissary log. Talked to staff about commissary log, and are currently using Ralph's in Phoenix, and said sometimes use BLT in Mesa.
