Inspector's notes

Observed cold brew coffee holding at 53*F in an insulated drink dispenser. Per PIC, the cold brew had been removed from the cooler less than 4 hours prior. TCS Cold brew is prepared at another location that is used as a commissary and has not been evaluated for shelf stability per PIC. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. PIC added ice as an ingredient to the cold brew to rapidly cool the cold brew to 41*F. Corrective Action: Corrected at time of inspection.

Core-3-304.14, C: Wiping Cloths, Use Limitation o Observed multiple in use wiping cloths left on the counter of the preparation table at time of inspection. Discussed with operator when using wiping cloths the cloth shall be kept in the sanitizer solution while not in use. Operator prepared a sanitizer bucket using chlorine bleach, the bucket measured 50ppm and placed the wiping cloths in the bucket. Correct By: Corrected At Time Of Inspection
