Observed sliced cheese with internal temperatures between 51*F and 61*F at the time of the inspection. Except during preparation and cooking all TCS food shall be maintained at 41°F or less. Person in charge voluntarily discarded the cheese and will make sure cheese is placed below fill line in the cold holding unit. Observed a large mixing bowl with raw beef, raw bacon, RTE sliced ham and raw chicken. The raw chicken was placed above the raw beef, the sliced ham was in between the raw beef and raw bacon. Discussed with owner that all raw animal proteins must be separated and stored to prevent cross-contamination. Also discussed that any RTE foods shall be stored above any raw animal proteins. Owner placed the raw shell eggs below the RTE salsa, the raw chicken below the raw beef and bacon, and the RTE sliced ham above the raw animal foods. Owner attempted to turn on hot water heater causing the generator to fail. Power was no longer available to the establishment. Do not operate until power is restored. Discussed with owner that the obtainment of fresh water shall all be done at an approved commissary.
