Observed 2 tubs of Time/Temperature Control for Safety (TCS) food items including Goat and Saag (cooked spinach and onion dish) located in the walk-in cooler registering internal temperatures ranging between 55°-85°. Per the person in charge, the Goat had been cooked and placed in the cooler last night and the Saag had been cooked and put in the cooler on 11/18. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. The person in charge voluntarily discarded the food items at the time of inspection. Corrective Action: Corrected at time of inspection.

Observed deep, tightly-lidded plastic container of cooked chicken cooling in the lower compartment of prep-style refrigerator. Please ensure cooling foods are cooled in containers and in equipment that will facilitate the cooling process. Person in charge (PIC) moved chicken into smaller metal containers and placed in the walk-in refrigerator to finish cooling. Chicken was within parameters for proper cooling times and temperatures.
