Inspector's notes
Observed corn dogs located in a hot-holding display case opposite the coffee bar registering internal temperatures ranging between 115°F-116°F. Per manager, the corn dogs had been placed in the hot-holding display case 3 hours prior to the time of observation. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. The manager voluntarily discarded the corn dogs at the time of inspection. Corrective Action: Corrected at time of inspection.
