Inspector's notes

Observed TCS foods including cooked meats, rice, and beans in hot holding unit have an internal temperature of 95-110*F, temperatures taken at 2:30pm. Hot holding unit digital thermometer read 127*F. PIC stated that hot held foods were cooked at the commissary in the morning with the first order at the event being at 11:30am. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Instructed PIC to discard all hot held food items at 3:30pm following time as a control. Establishment was closed for business at 3:30pm. Corrective Action: Corrected at time of inspection.
