Observed TCS dips in clear container and Igloo with internal temperatures between 50-60 degrees F. Per operator, items were brought to the market 2 hours prior to this inspection. Educated operator that except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Operator corrected by placing ice on items and will use time as control. Corrective Action: Correct at once.
