In tall reach in refrigerator, raw proteins/ 55*F and cooked macaroni and cheese/ 53*F out of internal temperatures. Per employee, TCS foods were removed from cold holding within normal time parameters. Instructed employee to provide ice baths to reach in refrigerator to rapidly cool TCS foods back down to the proper cold holding temperature. Maintain TCS (time/ temperature control for food safety) foods at a cold holding temperature of 41*F or less at all times. Corrective Action: Corrected at time of inspection.
