Inspector's notes

Observed wiping cloth stored in the sanitizer bucket beneath the food prep area, containing less than 10 ppm chlorine sanitizer when measured with a chemical test strip. Discussed that unless dry, sani towels should be kept in an approved sanitizer at the appropriate concentration (50-100ppm for chlorine). The manager removed the wet towels to be cleaned and placed new towels on the counter stored in a chlorine solution measuring 50ppm. All wet wiping cloths must be stored in sanitizer buckets with approved sanitizer concentrations. Wiping cloths were placed in sanitizer buckets with approved sanitizer concentrations at time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed no water available in the mobile unit for handwashing. According to PIC, the water was filled at the commissary and was possibly emptied due to filling the steam table. PIC used bottled water to partially fill the tank. Discussed the importance and requirement for maintaining hand washing stations with water, soap and paper towels. Food service must not be performed when employees are unable to wash hands due to inoperable hand sinks or the absence of water. Water must be obtained from the commissary prior to operating the mobile unit. Water from the tank should be reserved for handwashing and washing dishes/equipment. Handwash sinks must be supplied with hot water of at least 100°F, soap and an approved hand drying provision at all times. Facilities must be maintained in a condition that promotes handwashing. Corrective Action: Corrected at time of inspection.

Observed cooked carne asada and a large bucket of consomme cold holding in the reach-in refrigerator with internal temperatures of 61-70F, probe thermometer, verified by PIC. According to PIC, the foods were cooked at the commissary and hour prior to inspection; PIC reheated to at least 165F. Food must be cooked and cooled at the commissary prior to being stored on the mobile unit. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection.
