-- Case of shelled eggs stored above multiple ready-to-eat foods such as potatoes, cheese, and cooked meats (pollo asada, al pastor, and carne asada) in reach-in refrigerator. No visible contamination observed. Reviewed food storage requirements for raw animal foods. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. At time of inspection observed several ziploc bags containing carne asada, pastor and chicharron. Per operator the meats were prepared the previous day inside the mobile food unit. Discussed with operator TCS (time/temperature control for safety) foods shall be prepared on the same day of service and shall not be held over. The food items were embargoed at time of inspection. Corrective Action: Corrected at time of inspection. MCEHC Chap. 8, Sec. 3, Reg. 5e - Mobile food establishments serving time/temperature control for safety foods shall maintain a log of visits to the approved commissary or food service establishment as required by this Department. This log shall be maintained using a Department approved format and maintained with the establishment at all times. During inspection observed a stainless steel container holding cooked ground beef with an internal temperature ranging from 118*F to 120*F. Per the person in charge the cooked ground beef had dropped below 135*F for approximately 15 minutes. The cooked ground beef was immediately reheated to 165*F and placed in a hot holding container.
