#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed various items in both refrigeration units above 41 degrees Fahrenheit, ranging in temperature from 47-53 in the rear unit, and 55-70 in the unit near the sink. Operator verified food had been placed in the unit around 8am that morning, and that all food was bought pre-prepped. Operator also explained the unit generator had been overheating and turning off at random intervals, affecting refrigeration. Rear cold holding unit read at 50 degrees Fahrenheit during inspection, and all food still within proper temperature parameters in this unit was moved to an alternative cold holding unit under ice to maintain temperature. In unit near sink, fridge was properly holding at 41 degrees, but various foods had been placed in there recently from hot/room temperature. All cooked beef and beans within this unit were embargoed. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

Observed white container of unknown liquid stored under three-compartment sink. When asked the contents of the container, the operator stated it contained degreaser. Working containers used for storing poisonous or toxic materials such as cleaners and sanitizers taken from bulk supplies shall be clearly and individually identified with the common name of the material. Operator labeled container with it's common name at time of inspection.
