Observed cooked rice temp at 77*F-83*F. Person in charge stated that rice was cooked at commissary at 7am with it being 1pm at the time of inspection. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. All TCS foods improperly cooled were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Observed establishment to have lavender scented bleach used as sanitizer. Explained to staff that scented chemicals are not approved for food contact surfaces. Chemical sanitizers and antimicrobials for food contact surfaces shall meet requirements in 40 CFR 180.940 or 40 CFR 180.2020. Person in charge obtained unscented bleach. Corrective Action: Corrected at time of inspection.
