Due to the violations noted on this inspection report, County legal action may result from this inspection.Establishment was observed operating outside the scope of their approved operating permit in violation of MCEHC Chap. 1, Reg. 4(a). Establishment was observed storing open containers of ice cream/sorbet and hot holding corn and cheese sauce. Observed scooping ice cream, sorbet, and making Tostilocos and elote cups. Observed no hand sink, soap, or towels located inside the vehicle. PIC stated that they use a container of water to rinse off the side of the truck and then hand sanitizer. PIC provided soap, towels, and a catch basin for the hand sink at time of inspection. Informed PIC that they were permitted to operate with close packaged TCS foods. Informed PIC that they need to apply and be approved for a Mobile Type 3 permit if they would like to continue these operations. Provided application information via email.

Observed no hand drying provisions available at time of inspection. Informed PIC that hand drying provisions are required to be supplied at all times. PIC provided hand drying provisions. Handwash sinks must be supplied with hot water of at least 100°F, soap and an approved hand drying provision at all times. Facilities must be maintained in a condition that promotes handwashing. This log shall be maintained using a Department approved format and maintained with the establishment at all times.
