Inspector's notes
Observed mobile food unit use garden hose to connect water tank in mobile food unit with residential water supply. Discussed only food grade hose to be used and water tank to be filled at approved commissary. Person in charge removed garden hose connection at time of inspection. MCEHC Chap. 8, Sec. 3, Reg. 6b, 8c, 9b, 10c, 11b - All time/temperature control for safety foods shall be prepared on the same day of sale or service. Time/temperature control for safety foods shall not be held over from a previous day's operation unless otherwise approved by the Department. Addl Notes: Observed advanced prep of TCS foods such as meats done and stored in the mobile food unit. Discussed minimal/final service prep only to be done in the mobile food unit. MCEHC Chap. 8, Sec. 3, Reg. 5e - Mobile food establishments serving time/temperature control for safety foods shall maintain a log of visits to the approved commissary or food service establishment as required by this Department. This log shall be maintained using a Department approved format and maintained with the establishment at all times. The logs shall be maintained for a period of 30 days and should be available for review by the Department. Addl Notes: Observed mobile food unit not maintain a daily commissary visit log sheet. Discussed maintaining log of commissary visits, provided commissary log sheet. MCEHC Chap. 8, Sec. 3, Reg. 5b - Mobile food establishments shall operate from an approved commissary or other food service establishment as required by this Department, and shall report at least daily to such location for supplies, food storage, vehicle and equipment cleaning, waste disposal, and service operations. Addl Notes: Operator unable to provide current commissary agreement. Most recent commissary agreement available was dated 2023. Discussed operating requirement to maintain active commissary agreement. MCEHC Chap. 8, Sec. 3, Reg. 6d, 9d, 10e, 11d - Food preparation shall be simplified to reduce excessive steps where food may become contaminated. Excessive steps may include, but are not limited to, cooking overnight without oversight, cooling, or cutting large volumes of food items. This prohibition does not apply to foods that have been prepared or packaged in permanent food establishments or commissaries meeting the requirements of this code. Addl Notes: Observed cooked meats that were prepared the day before cooked/cooled inside the mobile food unit, and stored inside the mobile food unit overnight. Discussed advanced food prep to be done at an approved commissary kitchen. No food storage in the mobile food unit.
