Observed large, heavily scored cutting board on top of cold holding unit near service window. Cutting board was stationary and unable to be moved for easy cleaning at 3-compartment sink. All equipment must be maintained in good repair at all times. Repair all equipment to a state of good repair prior to next routine inspection. All food-contact surfaces must be smooth, non-absorbent, and easily cleanable. PIC was instructed to plane cutting board to restore proper condition or replace with smaller boards that can accommodate proper cleaning frequency. Inspection was conducted at the Mobile Food Office.Notice of inspection rights were signed by Karem H.Inspection report was printed and handed to operator at time of inspection.Please correct the following prior to the issuance of a permit:• Please provide a #2 following the business name on the rear and both sides of the unit. Business name shall be 3 inches in height and 3/8 inch in thickness. At time of inspection business name was present but missing the #2.• Observed an accumulation of organic matter underneath the reach-in prep table and also the flat top/ stove area. Please ensure all surfaces are clean to the sight and touch.• Observed a two inch gap near the reach-in prep table and the door to the patio. Per operator the gap is used to drain all water when cleaning the unit. Please ensure all outer openings are protected by filling the gap or placing a screen. • Please ensure water temperature can be maintained at 100-110*F from the hand sink and the 3-compartment sink. At time of inspection the water temperature was able to reach 91*F.• Please ensure all plumbing is in good repair. At time of inspection observed a constant leak at the right side faucet of the 3-compartment sink. Per operator the water needs to be turned off to correct stop the leak.
