Observed raw ground meat in 2 coolers holding from 49-56 degrees Fahrenheit. Per operator, they had just retrieved the meat from the commissary within the past hour and had arrived at market approximately 30 minutes prior. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All meat was packed in ice in cooler at time of inspection to return below 41°F. unit temperature Corrective Action: Corrected at time of inspection.
