Observed cooked pasta located in the prep reach in fridge with internal temperature of 54 degrees F. in clear bags, while the ambient air temperature for the unit was at 41 degrees F. Per the operator, items were cooked and cool on the unit two days prior to this inspection. Discussed with operator that except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Correct at once.

Observed employee personal items (shirt, hat) stored in food storage bin for spices. Ensure to keep employee items stored in a designated area to prevent contamination. Operator proceeded to remove personal items. Corrective Action: Corrected at time of inspection. PRIORITY VIOLATION-7-201.11 - Priority: Separation-Storage Addl Notes: Observed Nitrile gloves stored in between different cleaning chemicals. Store food, equipment, utensils, linens, and away from toxic chemicals to prevent contamination. Operator proceeded to move gloves. Corrective Action: Corrected at time of inspection.
