Cooked chorizo and egg burritos in hot holding Cambro found with internal temperatures of 92*F. PIC stated the burritos were just made 1 hour ago. PIC ceased operations at 8:00 AM and discarded any remaining burritos. Please ensure hot held TCS food items are maintained at 135*F or above. Provided temperature guidelines and time as a control policy to PIC. Corrective Action: Corrected at time of inspection.

This log shall be maintained using a Department approved format and maintained with the establishment at all times. The logs shall be maintained for a period of 30 days and should be available for review by the Department.
