Inspector's notes

Observed cooked onions and cooked jalapeños stored on top of a counter at a temperature of 108 F at the time of inspection. Also observed cooked chicken patties and chicken wings at a temperature of 91 F in the standing fridge. Per PIC items were cooked 30 minutes prior to inspection. PIC reheated all items to 165 F and will hot hold items at 135 F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Corrective Action: Corrected at time of inspection.

Observed sanitizer bucket at less than 50 ppm chlorine PIC added chlorine at time of stored on the floor near cook line. Discussed the importance of proper sanitizer levels with the PIC. All wet wiping cloths must be stored in sanitizer buckets with approved sanitizer concentrations. Wiping cloths were placed in sanitizer buckets with approved sanitizer concentrations at time of inspection. Corrective Action: Corrected at time of inspection.
