Inspector's notes

Observed a container of raw shrimp in the bench fridge unit that was recorded at 54*F. The operator stated that the shrimp was prepped outside the unit and placed inside the fridge at 11:15am. Operator was informed that in order to keep cold food safe, the temperature needs to be held at or below 41*F. Operator placed the shrimp container in a ice bath within an adjacent cooler, and the temperature was dropped to 40*F at the time of inspection. Corrective Action: Corrected at the time of inspection.
